Home Made Sausages

Ingredients:

1lb good fat streaky pork

2-4 teaspoons mixed fresh herbs

1 large clove of garlic crushed

1 egg

2 ½ oz soft breadcrumbs

Salt and pepper

A litle oil


Thai dipping sauce

3 tablespoons fish sauce

3 tablespoons lime juice

2 tablespoons sugar

3 tablespoons warm water

1 garlic clove crushed

3-4 fresh hot red or green chillies

Fresh Coriander



Preparation:


Mince the pork-once for coarse sausages, twice for a finer texture. Chop the herbs finely. Crush the garlic to a paste with a little salt. Whisk the egg, then mix all the ingredients together thoroughly in a bowl and season well.


Heat a frying pan, fry off a little knob of the mixture to check the seasoning, and correct if necessary. Divide into 16 pieces and roll into sausages. Fry gently on a barely oiled pan until golden on all sides.


Substitute the herbs with chopped coriander and add 1-2 chopped chillies for an extra kick. Add a pinch of sugar to the mixture to give it a more oriental flavour. Serve with a Thai dipping sauce.


To make Thai dipping sauce combine all ingredients and put in a bowl and garnish with the fresh coriander
