Penne With Tomatoes, Spicy Sausage And Cream
1 teaspoon finely chopped rosemary
1 14oz tin of tomatoes
Salt, pepper and sugar to taste
8oz chorizo or kababossi sausage
Pinch of crushed chillies
4-6fl oz cream
2 tablespoons flat leave parsley, finely chopped
4 tablespoons freshly grated Parmesan cheese
Melt the butter in a large sauté pan, add the chopped rosemary and crushed chillies. Add the tin of tomatoes and season with salt, pepper and sugar to taste. Cover and cook for 5 minutes. Slice the sausage into rounds and add to the pan. Add the cream and chopped parsley and allow to cook for 3-4 minutes until the cream has reduced by half.
Cook pasta, till al dente, drain and toss with the sauce, add the cheese and toss again. Check seasoning and sprinkle with more chopped parsley.
