Tabouleh

Ingredients:


Serves 6-8


110g (4oz) bulgur (cracked wheat)

75ml (3fl oz) extra virgin olive oil

Juice of 2 or more lemons

Salt and freshly ground pepper

25-50g (1-2oz) parsley, freshly chopped

25-50g (1-2oz) mint, freshly chopped

50-110g (2-4oz) spring onion, chopped


Preparation:


Soak the bulgur in cold water for about 30 minutes, drain and squeeze well to remove any excess water. Stir in the olive oil and some of the lemon juice – more can be added according to taste. Season with salt and pepper and leave aside to absorb the dressing while you chop the parsley, mint and spring onions. Just before serving, mix the herbs with the bulgur, taste and add more lemon juice if necessary. It should taste fresh and lively.


You can also add chopped tomatoes, cucumber, coriander, olives.


This is lovely served with rocket.
